Ropa Vieja


Serves: 4 people

Cooking Time: 5 hours

Ingredients:
1) 1 1/2 lbs flank steak
2) 1 large yellow onion
3) 1 large red/yellow bell pepper
4) 1 cubanelle pepper (optional)
5) 1/2 cups white wine (optional)
6) 3/4 cup (1/2) bottle American lager (optional)
7) 1 6oz can tomato paste
8) 1 8oz can tomato sauce
9) 2 tablespoons minced garlic
10) 1/2 teaspoon cumin
11) 1/2 tablespoon kosher salt
12) 1/2 teaspoon black pepper
13) 1/2 white pepper pepper
14) 1 tablespoon lime juice (1 lime)
15) 1 cup beef broth
16) 1 red cayenne pepper or habanero pepper (optional)

Instructions:
1) Season flank steak on both sides liberally on both sides with salt and pepper.

2) Cut flank steak into 3-4 smaller portions against the grain and sear lightly on both sides.

3) Cut bell peppers, onions, and cubanelle pepper.

4) And all ingredients to slow cooker. Make sure flank steak pieces are fully submerged.

5) Food should be ready when the meat pulls apart easily.
