whisk until beaten

1 egg
2 cups (480 mL) milk
1/4 cup (50 grams) sugar
1/4 cup (60 mL) oil
1/4 tsp (2 grams) salt
3 1/2 tsp (14 grams) baking powder
2 cups (256 grams) flour

Crack egg into mixing bowl and whisk until beaten. Add milk then dry ingredients and mix until just combined, leave some lumps. Less mixing = fluffier pancakes/waffles. Oh yeah also works as waffle batter. Use 1/4 cup to pour pancakes onto hot griddle.

P.S. You could sift dry ingredients if you wanted to, never needed to though in the fifteen years I've been using this recipe.
